Discover what olive oil fruitiness is, its importance, and its types

Descubre qué es el frutado del aceite de oliva, su importancia y tipos

Just like wine, extra virgin olive oil (EVOO) is a product full of nuances that reflect its complexity and quality. One of the most important and often misunderstood attributes is fruitiness. But what does this concept really mean, and what impact does it have on the oil's sensory experience? We explain it below.

Fruitiness in olive oil: the touch that defines its flavor and quality

Fruitiness is one of the main organoleptic characteristics of EVOO, along with bitterness and spiciness.

The term “fruitiness” refers to the natural aromas and flavors that evoke fresh fruits and vegetables. This flavor is due to the presence of volatile compounds found in the olive and preserved in the oil thanks to its careful production and storage under optimal conditions. These compounds create olfactory and gustatory sensations similar to those found in fruits and herbs.

It is obtained by pressing olives harvested in their first stage of ripeness. As a result, the oil produced is fresh, fragrant, and has a pronounced fruity flavor.

High-quality extra virgin olive oil must always have fruitiness.

In fact, according to the International Olive Oil Council, an oil that does not exhibit this attribute cannot be considered virgin or extra virgin. Fruitiness is synonymous with freshness and careful production from healthy, well-processed olives.

Types of Fruitiness in Olive Oil

Within fruitiness, there are different categories depending on the time the olive is harvested and the variety used. These are the two main types:

  • Green Fruitiness: Found in oils obtained from early-harvested olives. Its profile is intense, with herbal notes reminiscent of freshly cut grass, tomato, green banana, almond, or artichoke. On the palate, bitterness and spiciness are more pronounced, giving the oil a vibrant character.
  • Mature Fruitiness: Present in oils made with riper olives. Its aromas evoke fruits such as banana, apple, fig, or peach, as well as nuts such as hazelnuts or almonds. Its flavor is milder and more balanced, ideal for those who prefer less intense oils.

These nuances play a key role in choosing the right oil depending on the type of dish it will be paired with. Green fruitiness will enhance salads and fresh vegetables, while mature fruitiness will add elegance to hot dishes or desserts.
