The Art of Blending: Create Your Own Signature Oil
In the world of wine, terms like blending or coupage are commonplace. However, in the olive oil sector, coupage is the master discipline that allows for the creation of unique and inimitable flavors.
If you have ever wondered why an oil tastes exactly the same year after year, or how to achieve the perfect balance between spicy and sweet, the answer lies in coupage. Today we explain what it is and how you can become a "master of the oil mill" in your own kitchen using our Extremaduran varieties.
What exactly is a Coupage?
The word comes from the French couper (to cut). In the olive oil world, a coupage is the blending of oils from different olive varieties in specific proportions to obtain a final product with determined sensory characteristics.
There are two types:
- In the field: Different olive varieties are milled together.
- In the winery: Already produced oils (monovarietals) are blended. This is the technique we propose today.
Advantages and disadvantages of olive oil coupage: The balance of flavor
The main advantages of EVOO coupage are those derived from its stability and its capacity for flavor customization:
- Sensory balance: If one oil is very bitter (like Picual) and another is very sweet (like Arbequina), coupage allows you to find the perfect middle ground.
- Complexity: By combining several varieties, the range of aromas multiplies (you can have the tomato notes of Picual and the apple of Arbequina in the same dish).
- Customization: It allows you to adapt the oil to the specific taste of each diner or recipe.
Likewise, its disadvantages are mainly its lack of identity (especially when it is an industrial coupage whose goal is to stabilize the flavor and not create personalized options) and the difficulties in achieving the desired flavor:
- Loss of identity: If not done carefully, the unique characteristics that make a monovarietal special can be diluted.
- Technical difficulty: Finding the exact proportion requires patience and a good palate.

Do you have our bottles of Arbequina, Picual and Koroneiki in your pantry? If you don't, you'll soon want to get our multivarietal set. If you already have them, we propose three blending "recipes" for you to experiment with:
1. The "Extremaduran Balance" Coupage (Mild but full-bodied)
Ideal for those who find Picual too strong but Arbequina too light.
- Proportion: 70% Arbequina + 30% Picual.
- Result: An oil with the sweet and silky entry of Arbequina, but with a slightly spicy aftertaste and greater stability thanks to Picual.
2. The "Aromatic Explosion" Coupage (Green and intense)
Perfect for gourmet salads or pasta.
- Proportion: 50% Koroneiki + 50% Arbequina.
- Result: Arbequina provides the fruity base, while Koroneiki adds notes of freshly cut grass and an incredible persistence on the palate.
3. The "Power and Character" Coupage (For meats and stews)
For lovers of strong sensations.
- Proportion: 60% Picual + 40% Koroneiki.
- Result: An oil with a lot of strength, high antioxidant content and an elegant bitterness that enhances any game or red meat dish.
Tips for creating your perfect EVOO blend at home
But it is not just about mixing without thinking. We leave you a series of expert tips that will help you make your coupage balanced and allow you to replicate it in the future.
Using a tasting glass is one of the best tips we can give you. Before you rush into making large blends, make some in small quantities (you can use a spoon as a measure) before mixing larger quantities.
Testing, with bread. The best way to test your coupage is with a piece of neutral bread. Make the mixture over a small bowl where you can do your tasting.
And of course, write down the proportions. If you find the blend of your life, make sure you know how much of each you put! And tell us on social media so that others can enjoy the same experience as you.
At Aceites Ducoy, we defend the purity of our organic monovarietals, but we believe that cooking is experimentation. By buying our three varieties, you not only take home three oils, but infinite possibilities to create your own signature oil.
